A refreshing watermelon and feta summer salad with mint, cucumber, and lime that’s perfect for picnics, BBQs, and hot summer days.
Ingredients
4 cups cubed watermelon
1 cup crumbled feta cheese
1 cucumber, thinly sliced
1/4 cup fresh mint leaves
Juice of 1 lime
Salt and pepper to taste
Instructions
Cube the watermelon into bite-sized pieces and place in a large bowl.
Slice cucumber thinly and add to the watermelon.
Crumble feta cheese over the mixture.
Chop and add fresh mint leaves.
Drizzle lime juice over the salad.
Season lightly with salt and pepper.
Toss gently to combine and serve immediately or chill for 15 minutes.
Notes
Use seedless watermelon for easier prep.
Replace mint with basil for a sweeter flavor.
Add a drizzle of balsamic glaze or honey for more depth.
Store leftovers in an airtight container for up to 24 hours.
