Description
Vegan burrito bowls with cauliflower rice are perfect for meal prep. Tofu, avocado, and salsa make these bowls nutrient-rich and flavorful.
Ingredients
1 recipe Tofu Crumbles
1 (12 ounce) package frozen riced cauliflower
4 teaspoons olive oil
1 teaspoon no-salt-added taco seasoning
1 cup thinly sliced red cabbage
1 cup diced avocado
½ cup pico de gallo or salsa
¼ cup chopped fresh cilantro
Instructions
1. Prepare Tofu Crumbles as directed.
2. While tofu cooks, heat riced cauliflower per package directions. Toss with olive oil and taco seasoning.
3. Divide cauliflower into 4 containers.
4. Top with tofu, red cabbage, avocado, pico de gallo, and cilantro.
5. Seal and refrigerate for up to 4 days.
Notes
Use fresh cauliflower rice if preferred.
Swap tofu for black beans or lentils if desired.
Add lime juice or hot sauce for extra kick.
