Description
A fast, nourishing vegan quinoa bowl loaded with black beans, spinach, avocado, corn, and fajita veggies. Perfect for Black Friday reset meals.
Ingredients
1/2 cup quinoa
4 cups fresh spinach
1 1/2 cups frozen fajita vegetables (bell peppers and onions)
1 cup canned black beans, drained and rinsed
1 cup corn, drained
1 ripe avocado, sliced
Instructions
1. Cook quinoa according to package instructions.
2. While quinoa cooks, sauté spinach until just wilted.
3. Heat fajita veggies in a separate pan or microwave until warm.
4. Divide cooked quinoa among four bowls or containers.
5. Top each with black beans, corn, sautéed spinach, and fajita veggies.
6. Add fresh avocado slices before serving or sealing for meal prep.
Notes
Add lime juice, tahini dressing, or chopped herbs for extra flavor.
Store in airtight containers for up to 3 days.
Serve warm or cold.
Substitute sweet potatoes or chickpeas for variety.
