Ingredients
2 cups heavy cream or full-fat coconut milk
1 cup unsweetened almond milk
1/3 cup erythritol or monk fruit sweetener
1 teaspoon vanilla extract
1/4 teaspoon xanthan gum (optional)
1 pinch salt
Instructions
In a mixing bowl, combine the heavy cream, almond milk, sweetener, vanilla extract, and salt.
Whisk until the sweetener is fully dissolved and the mixture is smooth.
If using xanthan gum, sprinkle it over the mixture and whisk again to avoid clumping.
Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until thick and creamy.
Transfer the churned ice cream into a freezer-safe container, smooth the top, and seal tightly.
Freeze for at least 2 to 4 hours for a firmer texture.
Let sit at room temperature for 5 to 10 minutes before scooping for the best texture and flavor.
Notes
For a vegan version, use full-fat canned coconut milk and almond milk.
Add-ins like sugar-free chocolate chips, fruit puree, or natural extracts can be added during the last minutes of churning.
A tablespoon of vegetable glycerin or vodka can help maintain a softer texture in the freezer.
If you don’t have an ice cream maker, freeze the mixture in a shallow dish and stir every 30 minutes for 2 to 3 hours.
