Ingredients
2 ¼ cups flour (all-purpose, gluten-free, or keto-friendly)
1 teaspoon baking soda
1 cup unsalted butter, softened
1 tablespoon unsalted butter
1 cup white granular sugar substitute (1:1 baking ratio)
½ cup brown sugar substitute (1:1 baking ratio)
2 large eggs, room temperature
1 teaspoon vanilla extract
1 cup sugar-free chocolate chips
½ cup chopped nuts (optional)
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour and baking soda and set aside.
In a large bowl, cream together softened butter and both sugar substitutes until smooth and fluffy.
Add dry ingredients to the wet mixture in two stages, stirring gently each time until combined.
Add eggs and vanilla extract, mixing until just incorporated.
Fold in sugar-free chocolate chips and optional nuts.
Drop dough by tablespoonfuls onto the prepared baking sheet.
Bake for 10 to 12 minutes or until the edges turn golden brown.
Remove from oven and let cookies cool on a wire rack.
Notes
For keto or gluten-free versions, use low-carb Carbalose flour or gluten-free flour blends that measure 1:1 with all-purpose flour. Use sugar substitutes that are heat-stable and measure like sugar. Don’t overbake for chewier cookies.
