Description

This Spicy High-Protein Beef & Rice Bowl is a quick, flavor-packed meal that combines lean beef, rice, and colorful vegetables in a spicy-sweet sauce. Perfect for busy nights, this 38g protein recipe keeps you full and satisfied without the fuss.


Ingredients

3 cups cooked rice

2 tablespoons olive oil

a pinch of chili flakes

half a medium onion, diced

2 cloves garlic, minced

1 pound lean ground beef

1 small can kidney beans, drained and rinsed

1 tablespoon sriracha

1 tablespoon maple syrup

1/4 cup tamari

1 teaspoon sesame oil

half a red bell pepper, diced

half a zucchini, diced

1 handful of arugula or spinach

1 handful of chopped cilantro


Instructions

1. Cook rice according to the package directions and set aside.

2. In a large pan, heat olive oil over medium heat. Add chili flakes and onion and cook until soft.

3. Add the ground beef, breaking it up with a spatula. Cook until browned, then add minced garlic.

4. In a small bowl, whisk together sriracha, maple syrup, tamari, and sesame oil to make the sauce.

5. Add kidney beans, diced zucchini, and bell pepper to the beef mixture. Cook until vegetables soften slightly.

6. Pour the sauce into the pan and stir to coat everything evenly.

7. Add arugula and cilantro, stir once more, and remove from heat.

8. Serve hot over rice and enjoy your spicy high-protein beef & rice bowl.

Notes

You can store leftovers in an airtight container for up to four days. Reheat in a skillet with a splash of water or tamari. Adjust spice by adding more or less sriracha. This bowl is perfect for meal prep and post-workout fuel.
