Description
This easy slow cooker hot honey chicken bowls recipe blends tender chicken, honey, garlic, soy sauce, and chili flakes for a sweet-spicy, crowd-pleasing meal perfect for busy weeknights.
Ingredients
1.5 to 2 pounds boneless skinless chicken breasts or thighs
1/2 cup raw honey
1/4 cup soy sauce
2 tablespoons apple cider vinegar
3 cloves garlic, minced
1 teaspoon crushed red pepper flakes (adjust to taste)
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon cornstarch (optional, for thickening)
2 tablespoons water (only if using cornstarch)
Steamed rice, for serving
Chopped green onions, for garnish
Sesame seeds, for garnish
Instructions
Add chicken to the bottom of the slow cooker.
In a bowl, whisk together honey, soy sauce, apple cider vinegar, garlic, red pepper flakes, salt, and black pepper.
Pour the sauce over the chicken and cover with the lid.
Cook on low for 6–7 hours or high for 3–4 hours, until the chicken is cooked through and tender.
Remove chicken and shred using two forks.
(Optional) In a small bowl, mix cornstarch with water and stir into the sauce. Let cook for another 15–20 minutes on high to thicken.
Return shredded chicken to the slow cooker and mix with the sauce.
Serve over steamed rice and top with green onions and sesame seeds.
Notes
For a spicier version, add extra red pepper flakes or a dash of hot sauce. To reduce heat, omit the chili flakes and add a bit more honey. Chicken thighs yield juicier results, but breasts also work well.
