This roasted cauliflower with tahini sauce is a bold, plant-based dish packed with nutty, smoky, and tangy flavors, perfect for healthy meals.
Ingredients
1 large head cauliflower, cut into florets
2–3 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon ground cumin
1/4 teaspoon smoked paprika (optional)
1/3 cup tahini
2 tablespoons lemon juice
1 small garlic clove, grated
2–4 tablespoons water (to thin sauce)
Instructions
Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
Cut cauliflower into florets and pat dry.
In a large bowl, toss cauliflower with olive oil, salt, pepper, cumin, and paprika.
Spread florets on the baking sheet without overcrowding.
Roast for 25–30 minutes, flipping halfway through, until golden and crispy.
In a small bowl, whisk tahini, lemon juice, garlic, and salt.
Add water gradually until sauce is smooth and pourable.
Drizzle tahini sauce over roasted cauliflower and serve warm or at room temperature
