Ingredients
For the Cake:
2 cups all-purpose flour
1 ¾ cups granulated sugar
¾ cup vegetable oil
4 large eggs
1 cup pineapple juice (100% pure)
1 tsp vanilla extract
1 ½ tsp baking powder
½ tsp salt
For the Pineapple Glaze:
1 cup powdered sugar
¼ cup melted butter
¼ cup pineapple juice
Instructions
Preheat the oven to 350°F (175°C) and grease a bundt pan with butter or non-stick spray.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
In a separate bowl, beat the eggs, oil, vanilla extract, and pineapple juice until smooth.
Gradually mix the wet ingredients into the dry ingredients, stirring until just combined. Avoid overmixing to keep the cake light.
Pour the batter into the prepared bundt pan and smooth the top.
Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack.
Making the Pineapple Glaze:
In a small saucepan, melt the butter over low heat.
Stir in the powdered sugar and pineapple juice, whisking until smooth.
Pour the warm glaze over the cooled cake, letting it drizzle down the sides.
Notes
For extra pineapple flavor, add ½ cup of crushed pineapple to the batter.
For a dairy-free version, substitute butter with coconut oil in the glaze.
