Ingredients
1 cup creamy peanut butter
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
Instructions
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the peanut butter, butter, brown sugar, and granulated sugar until smooth and fluffy.
Add the egg and vanilla extract and beat until well combined.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually mix the dry ingredients into the wet mixture until just combined.
Roll the dough into 1.5-inch balls and place them onto the baking sheet.
Use a fork to press a crisscross pattern into each dough ball.
Chill the shaped dough for 30 minutes in the refrigerator.
Bake for 9 to 11 minutes or until edges are golden and centers are just set.
Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Do not use natural peanut butter as it can cause the dough to be oily or too soft. For gluten-free cookies, use a 1:1 gluten-free flour blend. To make vegan, substitute the egg with applesauce or a flax egg and use plant-based butter. Cookies can be frozen before or after baking. Chilling the dough enhances flavor and prevents excess spreading.
