Description

A sweet and savory maple mustard chicken bowl made with juicy roasted chicken, a tangy homemade glaze, hearty grains, and seasonal vegetables—perfect for a comforting and balanced dinner.


Ingredients

1.5 lbs boneless, skinless chicken thighs or breasts
3 tablespoons Dijon or whole grain mustard
2 tablespoons pure maple syrup
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon apple cider vinegar or lemon juice
Salt and black pepper, to taste
2 cups cooked brown rice or jasmine rice
2 cups steamed or roasted vegetables (e.g. broccoli, carrots, green beans)
Pickled red onions or fresh herbs for garnish (optional)


Instructions

In a bowl, whisk together mustard, maple syrup, olive oil, garlic, and vinegar to make the glaze.
Season chicken with salt and pepper, then coat with the glaze and let marinate for 15–30 minutes.
Preheat oven to 400°F or heat a skillet over medium-high heat.
Roast the chicken for 20–25 minutes or sear in the skillet for 6–8 minutes per side, until golden and cooked through.
While chicken cooks, prepare rice and vegetables.
Once the chicken is done, let it rest for 5 minutes, then slice.
Assemble bowls with rice as the base, followed by vegetables and sliced chicken.
Drizzle extra glaze on top and garnish with pickled onions or herbs if desired.

Notes

You can swap chicken for tofu, chickpeas, or tempeh for a vegetarian version. Quinoa or farro works great instead of rice. Extra glaze also makes a delicious salad dressing or sandwich spread.
