Ingredients
1 ¾ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 tablespoons granulated sugar
1 cup whole milk
1 cup full-fat ricotta cheese
2 large eggs, separated
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
4 tablespoons melted butter
Instructions
Preheat the waffle iron and lightly grease it.
In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
In another bowl, mix together ricotta, milk, egg yolks, lemon zest, lemon juice, vanilla extract, and melted butter.
In a third bowl, beat egg whites until stiff peaks form.
Gently stir the ricotta mixture into the dry ingredients until just combined.
Fold in the beaten egg whites carefully, without overmixing.
Pour the batter into the waffle iron and cook until golden and crisp on the outside, about 3–5 minutes depending on your machine.
Serve hot with your favorite toppings like fresh berries, whipped cream, or maple syrup.
Notes
For gluten-free waffles, use a 1:1 gluten-free flour blend.
Low-fat ricotta or Greek yogurt can be substituted for regular ricotta.
