Description

Lazy Bang Bang Chicken Bowls are a quick, creamy, and spicy 25-minute meal made with crispy chicken, jasmine rice, and a sweet chili–sriracha sauce.


Ingredients

1216 pieces frozen popcorn chicken (or homemade air-fried chicken)
⅓ cup mayonnaise or plain Greek yogurt
⅓ cup sweet Thai chili sauce
12 tablespoons sriracha (adjust for heat preference)
23 cups cooked jasmine rice (2 microwave rice pouches work perfectly)
Optional: sesame seeds, sliced green onions, lime wedges


Instructions

Cook the frozen popcorn chicken according to the package directions, or air fry at 400°F for about 12 minutes until golden and crispy.
In a small bowl, whisk together mayonnaise, sweet Thai chili sauce, and sriracha until smooth and creamy. Adjust the spice level to your liking.
Warm the rice pouches according to the package directions and divide evenly into serving bowls.
Top each bowl with cooked chicken and drizzle the bang bang sauce generously over the top.
Garnish with sesame seeds, sliced green onions, and a squeeze of lime juice.
Serve immediately and enjoy while warm.

Notes

Swap regular mayo for avocado mayo to make it dairy-free.
Use cauliflower rice for a lower-carb option.
For extra crunch, toss the cooked chicken in the sauce before serving.
