Description
This Korean BBQ beef bowl features tender ground beef simmered with garlic, ginger, and Korean BBQ sauce. Served over jasmine rice with slaw, fried egg, and spicy sriracha, it’s fast, flavorful comfort in under 30 minutes.
Ingredients
1/2 yellow onion, diced
1 tablespoon ginger, minced
2 cloves garlic, minced
1½ pounds lean ground beef
2/3 cup Korean BBQ sauce
2 cups cooked jasmine rice
1 recipe spicy Korean vegetable slaw
6 eggs, fried
Sriracha, to taste
Green onions, sliced, for garnish
Instructions
1. Spray a nonstick skillet with olive oil and heat over medium-low.
2. Add the diced onion, ginger, and garlic with a pinch of kosher salt; sauté for 5–8 minutes until softened.
3. Add the ground beef to the skillet, break it up with a spoon, and cook until no longer pink.
4. Pour in the Korean BBQ sauce and stir to coat evenly.
5. Simmer for 2–3 minutes until the beef is fully infused and warmed through.
6. Divide jasmine rice into bowls and top with Korean BBQ beef.
7. Add slaw, fried egg, sriracha, and garnish with green onions.
8. Serve immediately and enjoy!
Notes
Use ground turkey for a lighter version.
Make slaw ahead to save time.
Store beef and rice separately for meal prep.
Top with kimchi or pickled cucumbers for extra zing.
