This Cowboy Beef Potato Bowl blends smoky ground beef, creamy mashed potatoes, and crispy bacon into one hearty ranch-style comfort meal inspired by Chef Mouny’s Texas roots.
Ingredients
Ground beef – 1 pound Baking potatoes – 2 pounds, peeled and chopped Bacon – 6 strips Butter – 2 tablespoons Milk or evaporated milk – 5 ounces Onion – 1 cup, chopped Green bell pepper – 1, chopped Frozen corn – 1 cup Garlic – 2 cloves, minced Smoked paprika – 1½ teaspoons Barbecue sauce – ¼ cup Worcestershire sauce – 1 tablespoon Dijon mustard – 1 teaspoon Cheddar or pepper Jack cheese – ½ cup, shredded French fried onions – ¼ cup Fresh parsley – 2 tablespoons, chopped Salt and black pepper – to taste
Instructions
Preheat oven to 375°F and grease a 2-quart baking dish. Cook bacon until crisp, then drain and reserve 1 tablespoon of bacon fat. In the same skillet, brown ground beef with onion, bell pepper, and garlic until fragrant. Add corn, smoked paprika, barbecue sauce, Worcestershire sauce, and mustard; stir and cook 5 minutes. Boil potatoes until tender, then mash with butter, milk, salt, and pepper until smooth. Stir in half the bacon bits, then spread the beef mixture evenly in the baking dish. Top with mashed potatoes, cheese, remaining bacon, and fried onions. Bake 20–25 minutes until golden and bubbly. Garnish with parsley before serving warm.
Notes
Use smoked paprika for an authentic cowboy flavor. Substitute sweet potatoes for a lighter twist. Make ahead and reheat at 350°F for 15 minutes before serving.
