Ingredients
8 oz whole-grain noodles
2 chicken breasts
1/2 cup cottage cheese
1/2 cup Greek yogurt
1/4 cup grated Parmesan
2 garlic cloves, minced
1 tbsp olive oil
Salt and black pepper to taste
1/4 cup pasta water
Instructions
1. Boil noodles until al dente.
2. Cook chicken in olive oil until golden.
3. Blend cottage cheese, yogurt, Parmesan, garlic, and pasta water.
4. Combine sauce with chicken and noodles in a skillet.
5. Season, toss, and serve warm.
Notes
Add steamed broccoli or spinach for color and nutrients.
Store in airtight containers for up to 4 days.
Reheat gently with a splash of milk to maintain creaminess.
