Description

1 lb ground beef (80/20 preferred)
1 cup elbow macaroni (uncooked)
4 cups beef broth
1 can (15 oz) crushed tomatoes
1 medium onion, diced
3 garlic cloves, minced
2 medium carrots, chopped
2 celery stalks, chopped
1 tablespoon olive oil
1 teaspoon Italian seasoning
1 bay leaf (optional)
Salt and black pepper, to taste
1 cup shredded cheddar cheese (optional for variation)
1 teaspoon chili flakes (optional for spice)
1 can black beans (optional Tex-Mex variation)
1/2 cup corn kernels (optional)
1 tablespoon tomato paste (optional for richer flavor)


Instructions

Heat olive oil in a large soup pot over medium heat and sauté onions and garlic until fragrant.
Add ground beef and cook until browned and crumbled, then drain excess fat.
Stir in carrots and celery and cook for about 5 minutes until slightly tender.
Add crushed tomatoes, beef broth, Italian seasoning, tomato paste (if using), and bay leaf.
Bring to a boil, reduce heat, and simmer covered for 15 minutes.
Add uncooked elbow macaroni and cook for another 10 minutes until pasta is al dente.
Remove the bay leaf, season with salt and pepper, and stir in optional ingredients like cheese or chili flakes if desired.
Serve hot and enjoy!

Notes

Use gluten-free pasta for a GF version.
Add cooked pasta just before serving if storing or freezing.
Ground turkey or lentils can be used instead of beef for a leaner or vegetarian version.
