Ingredients

1 lb ground lamb
1 cup uncooked basmati or jasmine rice
3 garlic cloves, minced
1 medium yellow onion, diced
2 tablespoons olive oil
2 tablespoons tomato paste
1 teaspoon ground cumin
1 teaspoon ground cinnamon
1 teaspoon ground coriander
Salt and pepper, to taste
2 cups low-sodium broth or water
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley or mint, for garnish
Optional: yogurt sauce or feta cheese for topping


Instructions

Heat olive oil in a large skillet over medium heat.
Add diced onion and sauté until translucent, about 4 minutes.
Stir in minced garlic and cook until fragrant, about 1 minute.
Add ground lamb and cook until browned, breaking it apart with a spoon, 7–8 minutes.
Stir in tomato paste, cumin, cinnamon, coriander, salt, and pepper, mixing well to coat the meat.
Add uncooked rice to the skillet and stir to combine.
Pour in broth or water, bring to a boil, then reduce heat to low and cover.
Simmer for 18–20 minutes or until rice is tender and liquid is absorbed.
Remove from heat and let sit covered for 5 minutes.
Fluff with a fork, stir in lemon juice, and garnish with fresh herbs.
Serve with a dollop of yogurt sauce or crumbled feta if desired.

Notes

Use leftover rice to speed up the recipe—just reduce the broth amount.
Add chopped vegetables like spinach, peas, or carrots for extra color and nutrition.
For a spicier version, add chili flakes or a dash of harissa.
