Description
A quick and flavorful ground-beef bulgogi rice bowl made with soy sauce, garlic, ginger, sesame oil, rice, and kimchi for a comforting Korean-inspired dinner.
Ingredients
1 lb ground beef
3 tbsp soy sauce
2 tbsp brown sugar or honey
2 cloves garlic, minced
1 tsp fresh ginger, grated
1 tbsp sesame oil
2 cups cooked white rice (short-grain or jasmine)
1 small cucumber, thinly sliced
½ cup kimchi
2 green onions, chopped
1 tbsp toasted sesame seeds
4 fried eggs (optional)
Instructions
Whisk together soy sauce, brown sugar, garlic, ginger, and sesame oil in a bowl.
Add ground beef to the marinade and let sit for 15–20 minutes.
Cook rice according to package instructions and keep warm.
Heat a skillet over medium-high heat and cook the beef mixture until browned and caramelized, about 7–8 minutes.
Divide rice into four bowls and top with the cooked beef.
Garnish each bowl with cucumber slices, kimchi, green onions, sesame seeds, and a fried egg if desired.
Serve hot and enjoy immediately.
Notes
For a low-carb option, use cauliflower rice instead of white rice.
Add gochujang or chili flakes to the beef for extra spice.
Substitute ground turkey, chicken, or tofu for a lighter alternative.
