A juicy and flavorful grilled lamb loin chops recipe marinated with garlic, rosemary, olive oil, and lemon for a perfect backyard dinner.
Ingredients
4–6 lamb loin chops
2 tablespoons fresh rosemary, chopped
4 garlic cloves, minced
1/4 cup olive oil
2 tablespoons lemon juice
Salt, to taste
Black pepper, to taste
Instructions
Take the lamb loin chops out of the refrigerator 30 minutes before marinating.
In a small bowl, mix olive oil, lemon juice, minced garlic, chopped rosemary, salt, and pepper.
Rub the marinade all over the lamb chops and place them in a dish or zip-lock bag.
Cover or seal and marinate in the fridge for 2 to 4 hours.
Preheat your grill to high heat (about 450–500°F).
Remove lamb chops from marinade and let any excess drip off.
Place chops on the grill and cook for 3–4 minutes on each side for medium-rare.
Use a meat thermometer to check the internal temperature (130–135°F for medium-rare).
Remove from the grill and let rest for 5–10 minutes before serving.
Notes
For a bolder flavor, marinate overnight in the refrigerator.
Fresh thyme or oregano can be substituted for rosemary.
Serve with chimichurri, tzatziki, or a squeeze of fresh lemon for extra zing.
