Ingredients
2 tbsp unsalted butter, melted
2 tbsp extra-virgin olive oil
2 tbsp freshly squeezed lemon juice
1 tsp freshly minced garlic
1 tsp honey
1 tsp sweet paprika
1 tsp dried oregano
1 tsp sea salt flakes
½ tsp freshly cracked black pepper
½ tsp chili flakes (optional)
4 skin-on salmon fillets
To serve: mashed potato, steamed greens, lemon slices, parsley
Instructions
1. Preheat oven to 425°F (220°C) and warm tray inside.
2. Mix butter, olive oil, lemon juice, garlic, honey, paprika, oregano, salt, pepper, and chili flakes.
3. Place salmon skin-side down on tray, spoon marinade evenly.
4. Bake 12 minutes, then broil 3 minutes until caramelized.
5. Serve with mashed potatoes, greens, and fresh lemon slices.
Notes
Marinade can be made up to 3 days ahead.
Store leftovers for 2 days and reheat gently or serve cold in salads.
