This fresh fruit ice cream recipe blends real strawberries, cream, vanilla, and lemon juice into a smooth, fruity, and naturally sweet frozen dessert.
Ingredients
2 cups chopped fresh fruit (strawberries, mango, peaches, or mixed berries)
1 tablespoon lemon juice
1/2 cup granulated sugar (for the fruit)
2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar (for the base)
1 teaspoon vanilla extract
Instructions
In a bowl, mix chopped fruit with lemon juice and 1/2 cup sugar. Let it sit for 30 minutes to macerate.
Blend or mash the fruit mixture until smooth or slightly chunky based on texture preference.
In a large bowl, whisk together cream, milk, remaining sugar, and vanilla extract.
Stir in the fruit puree until evenly combined.
Cover and chill the mixture in the refrigerator for at least 4 hours.
Pour the chilled mixture into an ice cream maker and churn according to manufacturer instructions for about 25–30 minutes.
Transfer the churned ice cream into a freezer-safe container, cover with plastic wrap touching the surface, and freeze for at least 2–3 hours until firm.
Notes
Use very ripe fruit for best flavor. You can substitute sugar with honey or monk fruit sweetener for a healthier version. For a dairy-free option, use coconut cream and almond milk. Avoid overchurning to maintain a creamy consistency. To add texture, mix in chopped fruit or nuts after churning.
