Description

This cucumber salad with tomatoes and feta is a refreshing, Mediterranean-inspired dish made with crisp cucumbers, juicy tomatoes, and creamy feta tossed in a lemon-olive oil dressing.


Ingredients

1 large English cucumber, thinly sliced
1 cup cherry tomatoes, halved
1/2 cup feta cheese, crumbled
1/4 cup red onion, thinly sliced
2 tablespoons extra virgin olive oil
1 tablespoon lemon juice or red wine vinegar
Salt, to taste
Black pepper, to taste
1 tablespoon chopped fresh oregano or parsley (optional)


Instructions

Slice the cucumber and place in a bowl.
Sprinkle with a little salt and let it sit for 5–10 minutes to release water, then pat dry.
Halve the cherry tomatoes and slice the red onion.
In a small bowl, whisk together olive oil, lemon juice (or vinegar), salt, and pepper.
Add the cucumber, tomatoes, and onion to a large bowl and toss gently with the dressing.
Crumble feta cheese on top and mix gently.
Garnish with fresh herbs if using and serve immediately.

Notes

Use English or Persian cucumbers for best crunch.
For extra creaminess, try a dollop of Greek yogurt in the dressing.
Store undressed salad in the fridge for up to 3 days and add dressing before serving.
Swap feta with vegan cheese for a dairy-free version.
