Crispy Chicken & Roasted Sweet Potato Bowl is a flavorful, balanced meal featuring roasted chicken, caramelized sweet potatoes, kale, and a smoky chipotle yogurt sauce.
Ingredients
8 oz chicken breast, cut into bite-sized pieces
1 medium sweet potato, peeled and cubed
2 tbsp avocado oil
½ tsp garlic powder
½ tsp chili powder
¼ tsp ground cumin
¼ tsp cayenne pepper
½ tsp kosher salt
2 packed cups kale leaves
2 tsp olive oil
1 tsp lemon juice
2 cups cooked brown rice
¼ cup crumbled feta cheese
1 medium avocado, sliced
2 green onions, chopped (optional)
¼ cup Greek yogurt
2 tbsp mayonnaise
1 tbsp chipotle sauce or finely chopped chipotle in adobo
1 tsp lemon juice
½ tsp honey or agave syrup
¼ tsp sea salt
Instructions
Preheat oven to 400°F. Toss sweet potato cubes with 1 tbsp avocado oil, garlic powder, chili powder, and salt. Roast for 10 minutes on a baking sheet.
Meanwhile, season chicken with cumin, cayenne, and a pinch of salt. Add to the baking sheet with sweet potatoes and roast for 15 more minutes, until both are golden and cooked through.
While roasting, massage kale with olive oil, lemon juice, and a pinch of salt for 1 minute until tender. Set aside.
In a bowl, whisk together Greek yogurt, mayonnaise, chipotle, lemon juice, honey, and salt until smooth.
Assemble bowls with rice at the bottom, topped with kale, roasted sweet potatoes, and chicken. Drizzle chipotle sauce over top and garnish with avocado, feta, and green onions.
Serve warm and enjoy the balance of crispy, creamy, and smoky flavors.
Notes
Swap brown rice for quinoa or cauliflower rice for a lighter version.
Use tofu or chickpeas instead of chicken for a vegetarian option.
