Description
These chocolate chip pecan cookies are soft and chewy with crisp edges, loaded with melty chocolate chips and crunchy toasted pecans for the ultimate homemade treat.
Ingredients
1 cup unsalted butter, room temperature
3/4 cup granulated sugar
3/4 cup light brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups semi-sweet chocolate chips
1 cup chopped pecans
Instructions
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone baking mat.
In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth and fluffy.
Add eggs and vanilla extract, then mix until fully combined.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the chocolate chips and chopped pecans.
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each.
For thicker cookies, chill the dough for 30 minutes before baking.
Bake for 10–12 minutes, or until the edges are golden brown and the centers are set but soft.
Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For deeper flavor, toast the pecans before adding. Swap chocolate chips for dark or white chocolate, or use walnuts instead of pecans. Don’t overbake for soft centers!
