Ingredients
2 cups shredded cooked chicken
4 medium Yukon Gold potatoes, diced
2 carrots, sliced
2 celery stalks, chopped
1 medium onion, chopped
3 garlic cloves, minced
6 cups chicken broth
1 cup heavy cream or milk
2 tablespoons butter or olive oil
Salt to taste
Black pepper to taste
1 teaspoon dried thyme
1 teaspoon dried or fresh parsley
Instructions
Heat butter or oil in a large pot over medium heat.
Add onion, garlic, celery, and carrots, and cook for 6–7 minutes until softened.
Add diced potatoes and chicken broth. Bring to a boil, then reduce heat to low and simmer for 15–20 minutes until potatoes are fork-tender.
Add shredded chicken and heavy cream or milk. Simmer for another 10 minutes, stirring occasionally.
Season with salt, pepper, thyme, and parsley.
Stir to combine, adjust thickness with broth or let simmer uncovered to reduce.
Serve hot, optionally garnished with cheese, bacon, or fresh herbs.
