Description

Cherry tomato Boursin pasta bake is a one-dish creamy dinner made with roasted tomatoes, garlic-herb Boursin cheese, and tender baby spinach.


Ingredients

2 pints cherry or grape tomatoes

1 (5.3 oz) Boursin cheese round (garlic & fine herbs)

1 tablespoon olive oil

1/2 teaspoon garlic salt

1/2 teaspoon black pepper

1 pound short pasta (penne, farfalle, or tortellini)

2 cups baby spinach


Instructions

1. Preheat oven to 400°F and bring a large pot of water to a boil.

2. Add tomatoes to a 9×13-inch baking dish and place the Boursin cheese in the center.

3. Drizzle with olive oil, then sprinkle garlic salt and pepper over the top. Gently stir.

4. Bake for 15–20 minutes until tomatoes burst and Boursin is soft.

5. While baking, cook pasta until al dente. Drain and set aside.

6. Gently crush tomatoes with the back of a spoon and stir into cheese to create a creamy sauce.

7. Add baby spinach and stir until wilted. Return to oven briefly if needed.

8. Toss cooked pasta into the dish and stir to coat evenly.

9. Serve immediately, optionally topped with Parmesan or fresh herbs.

Notes

Use tortellini for an extra creamy bite.

Add cooked chicken or mushrooms for protein.

Store leftovers in an airtight container for up to 3 days.

Reheat with a splash of milk or water to refresh the sauce.
