2 cups steamed rice

1 grated carrot

2 sliced spring onions

½ cup corn

½ cup black beans

½ tsp smoked paprika

1 cup grated cheese

½ cup Mexi tomato sauce

1 chili (optional)

Salt and pepper to taste

Tortilla chips for garnish


Instructions

1. Grate carrot and slice spring onions; reserve half for garnish.

2. Heat oil in a skillet, add rice, corn, and beans, season, and cook for 2 minutes.

3. Remove rice mixture and keep warm.

4. Add beef mince to the pan, cook until browned, and add carrot and smoked paprika.
