2 slices ciabatta, baguette, or focaccia bread
4–5 slices ripe tomato
4–5 slices fresh mozzarella
Fresh basil leaves
1–2 tablespoons extra virgin olive oil
1 teaspoon balsamic glaze (optional)
Pinch of salt and pepper
1 teaspoon pesto (optional)

Instructions

Lightly toast the bread until golden and crisp.
Drizzle olive oil on both slices of bread.
Layer tomato slices evenly on the bottom slice and season with salt and pepper.
Add slices of fresh mozzarella on top of the tomatoes.
Place fresh basil leaves over the mozzarella.
Drizzle with balsamic glaze or spread pesto if desired.
Close the sandwich with the second slice of bread.
Slice in half and serve immediately.

Notes
