Ingredients
4 large eggs
1/4 cup milk
4 small flour tortillas
1/2 cup shredded cheddar or mozzarella cheese
1/4 cup diced bell peppers
1/4 cup chopped cooked turkey or ham
Salt and pepper to taste
1 tablespoon butter or olive oil
Optional: avocado, black beans, mild salsa
Instructions
Whisk eggs with milk in a bowl. Heat butter in a skillet over medium heat. Scramble the egg mixture until fully cooked. Add diced peppers, meat, and cheese to the eggs; stir until cheese melts. Warm tortillas and fill each with the egg mixture. Roll into burritos. Serve warm or wrap for storage.
Notes
To freeze, wrap burritos in foil and place in freezer-safe bags. Reheat from frozen in the microwave or oven. Swap meat for beans to make them vegetarian. Adjust ingredients based on your child’s preferences.
