Ingredients
4 large eggs
1/4 cup milk
4 small flour tortillas
1/2 cup shredded cheddar or mozzarella cheese
1/4 cup diced bell peppers
1/4 cup chopped cooked turkey or ham
Salt and pepper to taste
1 tablespoon butter or olive oil
Optional: avocado, black beans, mild salsa
Instructions
Whisk eggs with milk in a bowl. Heat butter in a skillet over medium heat. Scramble the egg mixture until fully cooked. Add diced peppers, meat, and cheese to the eggs; stir until cheese melts. Warm tortillas and fill each with the egg mixture. Roll into burritos. Serve warm or wrap for storage.
Notes
