Description

Boursin baked tomato pasta is a creamy, one-pan dish made with roasted cherry tomatoes, red onion, garlic, and melted Boursin cheese.


Ingredients

1 pint cherry or grape tomatoes

1 medium red onion, roughly chopped

57 cloves garlic

½ tsp red pepper flakes

1 package Boursin cheese (any variety)

4 tbsp extra virgin olive oil

Salt and pepper to taste

8 oz dry pasta

34 fresh basil leaves, torn (optional)


Instructions

1. Preheat oven to 425°F.

2. Spread tomatoes, onion, and garlic in a baking dish.

3. Place the unwrapped Boursin cheese in the center of the dish.

4. Drizzle everything with olive oil and sprinkle with red pepper flakes, salt, and pepper.

5. Bake for 30–35 minutes until tomatoes burst and garlic is tender.

6. Meanwhile, cook pasta and reserve ½ cup of pasta water.

7. Stir the roasted mixture in the baking dish to combine the cheese and vegetables.

8. Add basil and pasta water to loosen the sauce if needed.

9. Stir in cooked pasta and serve immediately.

Notes

This recipe is naturally vegetarian.

Add grilled chicken, spinach, or mushrooms for variations.

Refrigerate leftovers for up to 3 days.

To reheat, add a splash of water or milk and warm gently.

Pasta shapes like fusilli or penne work best.
