Description

This Bobby Flay Salisbury Steak Recipe (With Mushroom Gravy) is the ultimate comfort food. Juicy, flavorful beef patties are seared to perfection and smothered in a rich, savory mushroom gravy. Perfect for a cozy family dinner, this easy homemade dish pairs well with mashed potatoes, buttered egg noodles, or rice.

Ingredients

For the Salisbury Steak Patties:

Ground beef (80/20 blend) – 1 lb
Onion (finely chopped) – ½ cup
Garlic (minced) – 2 cloves
Worcestershire sauce – 1 tbsp
Dijon mustard – 1 tsp
Egg – 1 large
Breadcrumbs (panko or regular) – ½ cup
Salt – 1 tsp
Black pepper – ½ tsp
Olive oil (for cooking) – 2 tbsp

For the Mushroom Gravy:

Butter – 2 tbsp
Mushrooms (sliced) – 1 cup
Onion (finely chopped) – ½ cup
Beef broth – 2 cups
Worcestershire sauce – 1 tbsp
Dijon mustard – 1 tsp
Cornstarch – 1 tbsp
Water – 2 tbsp
Heavy cream (optional) – ¼ cup

Instructions

In a large mixing bowl, combine ground beef, finely chopped onion, minced garlic, Worcestershire sauce, Dijon mustard, egg, breadcrumbs, salt, and black pepper. Gently mix until just combined, being careful not to overwork the meat. Shape into four oval patties, about ½ inch thick.

Heat olive oil in a large skillet over medium-high heat. Once hot, add the steak patties and sear for about 4-5 minutes per side until they develop a deep golden-brown crust. Remove from the pan and set aside.

In the same skillet, melt butter over medium heat. Add sliced mushrooms and chopped onions, sautéing for about 5-7 minutes until softened and caramelized. Pour in the beef broth, Worcestershire sauce, and Dijon mustard, stirring to deglaze the pan and incorporate the browned bits.

In a small bowl, mix cornstarch and water to create a slurry. Slowly add this to the pan while stirring continuously to thicken the gravy. Let simmer for another 5 minutes, then stir in the heavy cream if a richer texture is desired.

Return the Salisbury steak patties to the skillet, spooning the hot mushroom gravy over them. Simmer for a few more minutes to allow the flavors to meld. Serve immediately over mashed potatoes, rice, or buttered egg noodles.

Notes

For extra tenderness, avoid overmixing the beef mixture. If you prefer a gluten-free version, substitute regular breadcrumbs with gluten-free panko and replace cornstarch with arrowroot powder for thickening. To deepen the umami flavor, add a splash of soy sauce or red wine while deglazing the pan. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months.
