Description
Baked Boursin pasta is a creamy, one-dish dinner made with Boursin garlic & herb cheese, cherry tomatoes, and whole garlic—perfect for a comforting, easy meal.
Ingredients
10 ounces cherry tomatoes
5 garlic cloves (peeled, whole)
2 teaspoons Italian seasoning
1/2 teaspoon kosher salt (plus more to taste)
1/4 teaspoon freshly ground black pepper (plus more to taste)
1/4 cup olive oil
5.2 ounces Boursin garlic & herb cheese (1 round)
4 ounces cream cheese (1/2 block)
8 ounces penne pasta (or another medium pasta)
1 tablespoon freshly squeezed lemon juice (plus more to taste)
3 cups baby spinach, lightly chopped
Grated Parmesan cheese (optional)
Chopped parsley (optional)
Instructions
1. Preheat oven to 375°F.
2. Add cherry tomatoes, garlic, Italian seasoning, salt, pepper, and olive oil to a 9×13” baking dish and toss to coat.
3. Place Boursin cheese and cream cheese in the center of the baking dish.
4. Bake for 30–35 minutes until tomatoes are burst and garlic is soft.
5. Cook pasta until al dente. Reserve 3/4 cup pasta water and drain the rest.
6. Mash baked garlic and tomatoes into the melted cheese. Stir in lemon juice and spinach.
7. Add 1/2 cup reserved pasta water and stir until smooth and creamy.
8. Add pasta and toss to coat. Add more water if needed.
9. Season to taste and garnish with Parmesan and parsley if desired.
10. Serve immediately.
Notes
To add protein, stir in shredded rotisserie chicken or cooked shrimp.
Use gluten-free pasta for a gluten-free version.
To reheat: microwave with a splash of water, or reheat gently in a pan.
Leftovers keep well for up to 3 days in an airtight container.
